I'm going to interpret this as you want to read mail from your Linux
workstation, off your Exchange server...

The easiest way is the Exchange web interface.  Mozilla works fine with it;
if you've upgraded to Exchange 2000/SP2, Netscape 4.x won't work anymore (at
least, in my experience).

Mutt supports IMAP, which Exchange 2000 supports just fine.  I've been using
it with our Exchange server for quite awhile now.  Works dandy.

You can always use VNC to connect, or run Windows under VMware.  I have
Outlook running under VMware at work, but it's slow, so I don't use it.
