Running Linux (smail and apache)
O'Reilly ISBN 56592469

For mail, I'll put in a word for -
Exim, The Mail Transfer Agent
by Philip Hazel <-- the programmer who writes Exim
O'Reilly ISBN 596000987

Easy to set up, lots of examples at exim.org. Extensive FAQ. The user
mailing list is really busy, and quite helpful (Philip replies daily).
