Personally, I would suggest starting with a minimal Debian Testing
installation, and then start adding packages from there.  My preference
is the KDE desktop environment, though depending on the age of your
grandson, you might want to use something a little more 'basic', and add
features yourself.  (Some sort of 'easy application launcher', rather
than having a full panel, desktop icons, and file browser.)
