If the goal is to filter things that will get to windows
boxes, ClamAv is probably the easiest thing to install.

If the goal is to make the system itself safe from the nasties,
this site has a good howto.

It doesn't cover setting up SELinux (skip SNARE), but otherwise it's
very close to DoD secure.

For truly secure stuff, go with SuSE's high-priced spread, and get the
EAL-4 Certification package.  

However, be aware that the easiest way to get EAL-4 Security is to
remove the power supply and weld the case shut.  You'll have a 
computer  that's just about as useful, and spend much less time.

EAL-4 security is extremely restrictive in what you can do.  It's
only for folks with tightly defined and limited requirements and
a real need for absolute security.
