[NBLUG/talk] RAID1 and partitions

I was about to suggest btrfs's internal RAID, but I don't think it would be
suitable for the situation you describe.  I use it for some personal
systems because of its flexibility---you can add and remove disks with
ease, and it supports with nonuniform disk sizes, meaning you can
incrementally upgrade an array online.  With two disks and its raid1 mode
you could boot to either disk, provided you installed grub to both.
