Seriously though, there does seem to be a problem with your install.
You might want to take a gander at RedHat/base/comps.xml.
This file lists all the package groups and all the packages that are contained
in each group. Look for the <id> tags and the packages listed after them.
The PDF you reference does not wander far from a text based install. In fact
it is damn close.... Throw the contents of the 3 ISO's into a dir and
install in text mode. You can select individual packages in text mode. The
installer will make sure all dependencies are met before it begins the
installation process.
Just pick up the few packages that you may or may not miss after you get the
system installed. Reference comps.xml if you need a list for a particular
group.

You really should take a look at kickstart installation methods for these
custom installs. kickstart gives you the ultimate in flexibility for
installing, upgrading, partitioning, installing groups and individual
packages and a whole host of other things.
